I don't mind certain MILDER flavored cheeses like cheddar, ricotta, camembert, brie etc as they actually have a nice "tolerable" taste and not too strong but I really don't understand how others can actually enjoy the really intense flavored traditional yet ridiculously expensive cheeses. Tho heard you're supposed to pair it with fine wine and I never really tried pairing it with wine so who knows? Perhaps I have been eating it all wrong - taking large bites out of it like it's a chocolate bar.

I once bought like 50 dollars worth of very expensive and traditional strong cheese. For the amount of money spent, I was expecting to experience a culinary delight but honestly, it was just torture trying to eat it. Just plain horrible. I couldn't waste it so left that really pricey piece of cheese out in the garden for the local stray cat to eat. Not sure if the ginger cat ate the cheese but it was all gone when I came back to collect the plate and it is pretty much the only animal that roams the courtyard garden. Tho I later learned that cats are lactose intolerant and shouldn't be fed cheese :/




Tho sometimes a homeless man comes along and maybe had enjoyed that cheese. Nonetheless it seems like some cats and certain people obviously love strong cheese and others don't.

According to science, the reason is probably genetic. Some people are genetically wired to genuinely enjoy intense flavored cheeses whilst others don't like the "authentic: cheese flavor. I am more in the latter group. And I am not alone - researchers in France found out that around11.5% of French people hate cheese.

So if you can't stand strong-flavored cheese - there's really nothing wrong with you and you don't need to force yourself to eat something just because it's expensive and raved on by cheese-loving friends. But I think mild-flavored cheese can be much easier tolerated by most people and why mild-flavored cheese is the most common cheese sold at supermarkets.

I do def like Jarlsberg cheese. It has a balanced MILD flavor that's not too overwhelming and a very nice flavor and I like it all melted on fresh sourdough bread. Actually eating one right now.

In case you don't know, the cheese making process will gradually eliminate the sugars of milk (Lactose) by turning them into Lactic Acid.
Hence, those who are VERY HIGHLY lactose INTOLERANT should still RUN AWAY from any SOFT cheeses, like Camembert, Brie, Ricotta, Mozarella, Hermelin, blue cheeses... BUT --depending on your level of intolerance-- you will be SAFE with HARD cheeses, anything like Comté, Beaufort, Cantal, Tomme, Reblochon, even Saint Nectaire and Raclette cheese, & also Parmesan, Edam... because they take a longer process to make. The older the better. They will have under 1% of Lactose remaining, if any left.

To fully enjoy a fine cheese you don't have to bite a large chunk of it. Lots of French people will have bread with their cheese. I like Comté just cut into small pieces. Wine is not mandatory either. If taken together, cheese is actually the side kick to wine, as you're not supposed to have alcohol with an empty stomach.

Soory, Babybel is... not really a true cheese. It's industrially made with leftover of cheeses. :P
