There are so many, they can usually be found listed as YA (Young Adult).

Harry Potter, Hunger Games, Twilight, Divergent are some extremely popular examples. Not very challenging reads, they are meant to be page turners. But still entertaining and satisfying in their own way

only manga - related ones, but they are harder to find than regular manga, I use bakatsuki to read all my light novels

I read quite alot of Visual Novels, Light Novels as well. Tate no Yuusha no Nariagari is finally getting an anime adaption ;)
Mushoku Tensei was one of the best novel in my book
