My own favorite recipes. - Caramelized mushroom risotto.
Not really fancy or nice lookin but it's really delicious and pretty easy to make. I used aged basmati rice and cooked a batch of (Golden Curry) sauce beforehand.
Just first stir-fry sliced mushrooms or chestnuts under high heat in a wok with little olive or soybean oil until tender enough. Then move to small pot and put a lid on top and dry simmer in low heat for approx 6 mins until the absorbed oil in the mushrooms seep out. Then mix in cooked rice and add in 3 spoonfuls of ready made Japanese curry sauce. And stir constantly for 3 mins under medium heat and serve for 2 or 3. Good as a side dish or on its own.
Prior to Mushroom risotto, I just finished Japanese curry rice today. Which is also easy to make.
Just add 350 grams of onions + 250 grams of cubed potatoes and pumpkin + 3 chicken necks to a pot. Add in 510 mls of water and then bring to boil. Then close the lid and simmer at low heat for approx 15 mins. Then add in (golden curry) Japanese mix to the pot, let it melt and simmer for 5 more minutes stirring constantly to get a thick sauce. And then serve it on rice.
