Thinking about 1 week long vacation. Northern light and blue lagoon is on the list. Besides that don't like too tourist stuff, more into local scene. What kind of food they are known for?

A week is more than enough time. Lots of nature. Roads are tight to drive on.
Pro tip: If you like to drink, I would recommend getting duty free prior to your flight..EVERYTHING is expensive.

If you go to the top 20 say you'll have a great food there, Reykjavik has lots of food places so pick the good ones. You have to book in some places as well, but fish dishes were really nice.
Things are very expensive yes, and blue lagoon apparently is very commercialised. I went to a smaller place that was similar, and it wasn't crazy busy. Apparently the main blue lagoon can be packed and is nothing like the pictures!
I would recommend the tours to take you places? The roads are very straight with nothing around so definitely not a fun place to drive. I went to the glacier / the waterfall / somewhere where the plates meet and they were all very nice. I can't remember the place names but quick google should tell you the proper names...
Lots of American people there when I went too, and everyone seemed to speak English so quite easy to get by there.
I think a week if you want to see a lot around the island, it's surprisingly big place, or go for a shorter break around Reykjavik if you like a more chilled break.
Not sure if this helps at all but it's a very nice place to say the least!

I avoid blue lagoon. Totally marketing gimmicks. The water is from the cooling pipes of a nearby power plant. I enjoyed the fish mostly. Be warned people of Reykjavik partied at the center hard. Plenty of drunk people and totally trashed the center on the weekends.
March is still freezing for sure...o, expect super short days. Night darkness savings time recommended

It's a geothermal power plant. At least for now, people of Iceland don't have the luxury of going nuclear yet. However, give Trump some time. After the Fed prints another few trillions dollars, and close the deal in Greenland. Iceland will be our 52nd state with all sorts of nuclear toys.

I will write it anyway. Your suggestions are to travel in spring (May / June) or fall (September / October). Its cuisine is traditional either in meat (Lamb, reindeer, whale), smoked / dried fish (salmon, cod, herring and shark) vegetables (Potato, Lombard, beet), snacks (Hamburgers, sesame biscuits) and dairy (skyr).
Apart from enjoying and experiencing the Northern Lights and the Blue Lagoon, also explore West Fjords (Westfjordurs). If you want to visit more places as an independent explorer and not as a collective local tourist, you must have knowledge of location on roads, mountain huts or require the services of a guide specialized in Icelandic routes.
It is better not to go to restaurants; Tip: Many supermarkets have buffets with prepared meals and charge by weight. It is much cheaper than going to a restaurant. The cheapest supermarkets are Bonus and Krónan. The dangers you can find are the natural ones, Reykjavík and Akureyri are the "big cities" of Iceland and are very safe and quiet. As a suggestion is that you do not go with everything booked in advance (unless you travel in high season and are not thinking about camping or hitchhiking).

I just booked the trip for the beginning of Mach 2020. I got 2 other people to go with me and we are going to rent a RV. Going to cook most of time and planning to buy the alcohol at the duty free. Maybe spend a night at a nice restaurant.
I also want to find a good indoor rock climbing place.
