Who doesn't love some Stravinsky? Also, Sibelius, Shostakovich, Smetana, Bernstein, Hindemith, and Walton are my personal favorites. :)

Flute. I always thought that was one of the most boring instruments until I came across Telemann (hope I didn't post this one before).
