I think there's nothing wrong with saying hi and asking how someone is doing, but try to make the message more meaningful. Bonus points if they bother to read my profile beforehand.

Why? Because none of those guarantee a message back.
I'm going to go on a limb and be the first to say even if you wrote a sentence about my profile or in a message, chances are still 50-50 about getting a reply. The same if all you wrote to me was a "Hi/How are you?"
Other people may have social anxiety and a "Hi" is all they can conjure. As others have mentioned, people may be testing the waters. Everything may be different once you get to that second sentence in a conversation.
Alot of people I've met on Hey-Ai stemming to real life meet ups are socially different from their online personas, some of those are my closest friends now.
These can be some of the best people you'll never meet.

However, I don't recommend it. As they say, you don't get a second chance to make a first impression. And the chance to get a reply is much higher if you can say something more interesting than a simple hi.
